Garden Salad​

Cooking Time: 10 minutes (no cooking) Ingredients 2 cups mixed lettuce (romaine, iceberg, or greens of choice)
1 medium cucumber, sliced
1 large tomato, diced or wedges
1 small red onion, thinly sliced
1 small carrot, grated or thin strips
½ cup sweet corn (optional)
½ cup sliced bell peppers (any color)
2 tbsp olive oil
1 tbsp lemon juice or apple cider vinegar
Salt and black pepper to taste
Method
Wash all vegetables thoroughly under cold water.
Chop lettuce into bite-sized pieces and place in a salad bowl.
Add cucumber, tomatoes, onions, carrots, corn, and bell peppers.
In a small cup, mix olive oil, lemon juice, salt, and pepper.
Pour dressing over the vegetables.
Toss gently to combine and serve fresh.
