Grilled Chicken Breast with Vegetables

Ingredients

For the Chicken:
2 chicken breasts
2 tbsp olive oil
1 tsp garlic powder
– 1 tsp paprika
1 tsp mixed herbs (thyme ororegano)
– Salt & black pepper to taste
1 tbsp lemon juice  
For the Vegetables:
1 cup broccoli florets
– 1 cup sliced carrots
1 bell pepper (any color), sliced 1 small zucchini, sliced<br/
– 1 tbsp olive oil
Salt & pepper to taste

Method

Marinate the Chicken
– Mix olive oil, garlic powder, paprika, herbs, lemon juice, salt, and pepper.
– Coat chicken and marinate for 15–30 minutes. 
Prepare the Vegetables
– Toss vegetables with
olive oil, salt, and pepper.
Grill tChicken
– Heat grill to medium-high.
Grill chicken 5–6 minutes per side. 
Cook the Vegetables
– Grill or sauté vegetables for 4–6 minutes until tender-crisp.

 
Serve
– Slice chicken and serve with vegetables.
– Optional: drizzle with lemon juice or herb dressing.
