Nigerian Jollof Rice with Chicken (Nourish Kitchen Style) Ingredients
For the Chicken:
– 6–8 pieces of chicken (drumsticks or thighs)
– 1 tsp ginger
– 1 tsp garlic
– 1 tsp curry powder
– 1 tsp thyme
– 1 seasoning cube
– Salt to taste- 1 onion (sliced)
For the Jollof Rice:– 3 cups long-grain parboiled rice
– 1/4 cup tomato paste- 4 fresh tomatoes (blended)
– 2 red bell peppers (blended)
– 1 onion (blended)
– 1 onion (sliced for frying)
– 1 tbsp curry powder- 1 tsp thyme
– 1 bay leaf
– 1/4 cup vegetable oil
– Salt to taste
– 2 seasoning cubes
– 4 cups chicken stock
Cooking Time: 45 minutes
Method
1. Season chicken with garlic, ginger, curry, thyme, onion, seasoning cube, and salt. Cook for 15
minutes and grill/fry lightly.
2. Heat oil, fry onions, then add tomato paste. Cook for 5 minutes.
3. Add blended tomato-pepper mixture and cook until reduced and fragrant.
4. Add curry, thyme, bay leaf, seasoning cubes, and salt.
5. Pour in chicken stock and bring to a boil.
6. Add washed rice, stir gently, cover, and cook until soft.
7. Reduce heat and steam on low for 10 minutes for perfect flavor.
8. Serve with grilled chicken and optional coleslaw side.
