Ingredients:
• 3 medium leeks, cleaned & sliced (white and light green parts)
• 3 medium potatoes, peeled & diced
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 1 litre (4 cups) vegetable or chicken stock
• 2 tbsp olive oil or butter
• 1 bay leaf (optional)
• Salt & black pepper, to taste
• ½ cup milk or cream (optional)
Method:
1. Slice and wash leeks well to remove sand.
2. Sauté onions and garlic in olive oil/butter 2–3 minutes.
3. Add leeks and cook 5 minutes until softened.
4. Add potatoes, bay leaf, and stock. Boil then simmer 20 minutes.
5. Remove bay leaf, blend soup until smooth.
6. Stir in milk/cream if using, season and serve warm.

Grilled Chicken Thighs (Herb & Garlic) Serves: 4
Cooking Time: 25–30 minutes (plus marination time)
Ingredients:
• 8 chicken thighs, bone-in or boneless
• 3 tbsp olive oil
• 3 cloves garlic, minced
• 1 tbsp lemon juice
• 1 tsp paprika
• 1 tsp dried thyme or rosemary
• ½ tsp black pepper
• 1 tsp salt
Method:
1. Mix marinade ingredients: olive oil, garlic, lemon, paprika, herbs, salt, pepper.
2. Coat chicken and marinate 30 mins (2–4 hrs best).
3. Grill on medium-high heat 6–7 min per side until cooked.
4. Allow to rest 5 mins before serving.
