Jollof RICE

Ingredients
3 cups long-grain rice
1 kg chicken pieces
4 fresh tomatoes, blended
1 medium onion, chopped
1 red bell pepper, blended
2 tablespoons vegetable oil
1 teaspoon salt
1 teaspoon curry powder
½ teaspoon dried thyme
3 cups water or chicken stock
Method
Heat the oil in a pot and cook the blended tomatoes and pepper until thick and reduced. Add the onion, salt, curry powder, and thyme, then stir gently. Add the chicken pieces and allow them to simmer in the sauce for several minutes. Rinse the rice and add it to the pot, stirring well to coat it in the sauce. Pour in the water or stock, cover, and cook on low heat until the rice is tender and fluffy. Serve warm.
