Riz Cantonnais (Chinese Fried Rice)
Cooking Time: Prep 15 minutes | Cook 20 minutes
Ingredients:
3 cups cooked long-grain rice (cold, preferably day-old), 2 tablespoons vegetable oil, 2 large eggs, 1 cup cooked chicken or shrimp diced, ½ cup green peas, ½ cup carrots finely diced, 2 spring onions sliced, 2 tablespoons soy sauce, ½ teaspoon salt, ¼ teaspoon black pepper.
Method: Begin by separating the cold cooked rice with your fingers so the grains are loose and not clumped. Heat one tablespoon of oil in a large pan or wok over medium heat. Crack the eggs into the pan and stir gently to scramble. Once softly cooked, remove the eggs from the pan and set aside. Add the remaining oil to the same pan, then add the carrots and peas and cook gently until slightly tender. Add the cooked chicken or shrimp and stir to warm through. Add the rice and gently lift and turn it with a spatula, mixing slowly without pressing. Pour in the soy sauce, then add salt and black pepper. Return the scrambled eggs to the pan, add the spring onions, and mix gently until everything is evenly combined and heated through.
