Healthy Jollof Rice (Light Version

This healthy jollof rice is a lighter take on a much-loved classic. It’s cooked with less oil and simple ingredients, making it perfect for everyday family meals.

Cooking Time: 40 minutes
Serves: 4

Ingredients

  • 2 cups long-grain rice
  • 3 medium fresh tomatoes
  • 2 medium red bell peppers
  • 1 medium onion
  • 2 tbsp vegetable oil
  • 1 tsp dried thyme
  • ½ tsp salt
  • 3 cups water

Method

  1. Blend tomatoes, peppers, and onion until smooth.
  2. Heat oil in a pot, add the blended mixture, and cook until slightly thick.
  3. Add thyme, salt, and washed rice.
  4. Add water, cover, and cook until rice is soft.
  5. Serve warm.

Nutrition Note
Lower oil makes this version lighter and heart-friendly.
