Healthy Jollof Rice (Light Version
This healthy jollof rice is a lighter take on a much-loved classic. It’s cooked with less oil and simple ingredients, making it perfect for everyday family meals.

Ingredients
- 2 cups long-grain rice
- 3 medium fresh tomatoes
- 2 medium red bell peppers
- 1 medium onion
- 2 tbsp vegetable oil
- 1 tsp dried thyme
- ½ tsp salt
- 3 cups water
Method
- Blend tomatoes, peppers, and onion until smooth.
- Heat oil in a pot, add the blended mixture, and cook until slightly thick.
- Add thyme, salt, and washed rice.
- Add water, cover, and cook until rice is soft.
- Serve warm.
