Avocodo Chicken Salad

⏱ Cooking Time: 25 minutes
🍽 Serves: 2–3

Ingredients

  • 300g diced chicken breast
  • 2 cups mixed vegetables carrot, cucumber, bell pepper, lettuce
  • 1 small onion, thinly sliced
  • 1 tbsp olive oil
  • Juice of ½ lemon
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Heat olive oil in a pan over medium heat.
  2. Add the diced chicken and season with salt and black pepper.
  3. Cook for 6–8 minutes , stirring occasionally, until chicken is
  4. fully cooked and lightly golden.
  5. Remove from heat and allow the chicken to cool slightly.
  6. In a bowl, combine the mixed vegetables and onion.
  7. Add the cooked chicken, drizzle with lemon juice, and toss gently.
  8. Serve chilled.
