Creamy Potato and Leeks Soup

Comforting and velvety, this creamy potato and leeks soup is gentle, warming, and perfect for cool evenings. Simple ingredients combine into a rich and satisfying bowl of nourishment.

Ingredients

  • 3 medium potatoes, peeled and diced
  • 2 leeks, cleaned and sliced
  • 1 small onion, chopped
  • 2 tablespoons butter or olive oil
  • 4 cups vegetable or chicken broth
  • 1/2 cup cooking cream
  • 1/2 teaspoon black pepper
  • Salt to taste

Method

  1. Heat butter or olive oil in a large pot.
  2. Sauté onion and leeks until soft (about 5 minutes).
  3. Add diced potatoes and broth.
  4. Simmer for 20 minutes until potatoes are tender.
  5. Blend until smooth using a hand blender.
  6. Stir in cream, salt, and pepper.
  7. Simmer 3 more minutes and serve warm.

Cooking Time: 30 minutes
