Creamy Potato and Leeks Soup

Ingredients
- 3 medium potatoes, peeled and diced
- 2 leeks, cleaned and sliced
- 1 small onion, chopped
- 2 tablespoons butter or olive oil
- 4 cups vegetable or chicken broth
- 1/2 cup cooking cream
- 1/2 teaspoon black pepper
- Salt to taste
Method
- Heat butter or olive oil in a large pot.
- Sauté onion and leeks until soft (about 5 minutes).
- Add diced potatoes and broth.
- Simmer for 20 minutes until potatoes are tender.
- Blend until smooth using a hand blender.
- Stir in cream, salt, and pepper.
- Simmer 3 more minutes and serve warm.
