Broccoli Cheddar Soup

Creamy, comforting, and deeply nourishing, this Broccoli Cheddar Soup is perfect for cozy lunches or light dinners. Fresh broccoli blends beautifully with rich cheddar cheese to create a smooth, velvety texture with wholesome flavor in every spoonful.

Ingredients (Serves 4)

  • 4 cups fresh broccoli florets (about 2 medium heads)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1½ cups shredded sharp cheddar cheese
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika (optional)

Method

  1. In a large pot, melt butter over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds.
  2. Sprinkle in flour and stir continuously for 1–2 minutes until lightly golden.
  3. Gradually whisk in vegetable broth, then milk and cream. Stir until smooth.
  4. Add broccoli florets and simmer 12–15 minutes until tender.
  5. Blend partially for a smoother texture if desired.
  6. Reduce heat to low and stir in shredded cheddar until melted and creamy.
  7. Season with salt, pepper, and paprika. Adjust to taste.
