West African Chicken Peanut Stew
A rich and comforting stew combining tender chicken with creamy peanut sauce and warm spices, perfect for family meals.

Ingredients
- 500g chicken pieces
- 1 cup natural peanut butter
- 2 tomatoes (blended)
- 1 onion (chopped)
- 1 tbsp tomato paste
- 2 cups chicken stock
- 1 tsp ginger
- 1 tsp garlic
- Salt to taste
Method
- Sauté onion, garlic, and ginger.
- Add chicken and brown lightly.
- Add blended tomatoes and tomato paste.
- Stir in peanut butter and stock.
- Simmer for 25 minutes until thick and fully cooked.
