At Dawn: Avocado & Egg Wholegrain Toast

A balanced breakfast rich in healthy fats and protein, designed to keep you full and focused throughout the morning.

Serves: 1

Ingredients

  • 2 slices wholegrain bread
  • 1 ripe avocado
  • 2 eggs
  • ½ tsp lemon juice
  • Salt & black pepper to taste

Method

  1. Toast the bread.
  2. Mash avocado with lemon juice, salt, and pepper.
  3. Fry or boil eggs.
  4. Spread avocado on toast and top with eggs.
