Ghanaian Red Red

Red Red is a classic Ghanaian dish made with fried plantains and a rich bean stew cooked in palm oil. The vibrant color of the stew gives the dish its name, and it is both hearty and comforting.

Ingredients

  • 1 cup cooked black-eyed beans
  • 1 ripe plantain, sliced
  • 1 cup tomato puree
  • 1 small onion, chopped
  • 2 tbsp palm oil or vegetable oil
  • 1 garlic clove, minced
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Method

  1. Heat palm oil in a pot over medium heat.
  2. Add chopped onion and cook for about 2 minutes.
  3. Stir in garlic and cook briefly.
  4. Add tomato puree, paprika, salt, and black pepper.
  5. Simmer the sauce for about 8 minutes.
  6. Add cooked beans and cook for another 5 minutes.
  7. In a separate pan fry the plantain slices until golden.
  8. Serve the bean stew with fried plantains.
