Ghanaian Peanut Soup

Ghanaian peanut soup is a rich and comforting dish made with ground peanuts, tomatoes, and aromatic spices. This hearty soup is commonly served with rice balls, fufu, or boiled rice and is loved for its creamy texture and deep flavor.

Ingredients

  • 1 cup peanut butter (natural, unsweetened)
  • 2 cups chicken broth
  • 1 cup tomato puree
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 tsp grated ginger
  • 1 tbsp vegetable oil
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup cooked chicken pieces (optional)

Method

  1. Heat vegetable oil in a pot over medium heat.
  2. Add chopped onion and sauté for about 2 minutes.
  3. Stir in garlic and ginger and cook briefly.
  4. Add tomato puree and cook for about 5 minutes.
  5. Pour in chicken broth and bring to a gentle simmer.
  6. Stir in peanut butter and mix until smooth.
  7. Add paprika, salt, and black pepper.
  8. Add cooked chicken if desired and simmer for 10 minutes.
  9. Serve hot with rice or fufu.
