Creamy Tomato Soup

A warm bowl of creamy tomato soup is comforting and full of rich flavor. Made with ripe tomatoes, gent herbs, and a touch of cream, this smooth soup is perfect for a light meal or paired with fresh bread.
Ingredients
2 cups ripe tomatoes, chopped (or canned crushed tomatoes)
1 small onion, diced
1 garlic clove, minced
2 cups vegetable broth
¼ cup cream
 tbsp olive oil
½ tsp dried basil
¼ tsp salt
¼ tsp black pepper
 Method:  Heat olive oil in a pot over medium heat.Add diced onion and cook for 3 minutes until soft.Stir in garlic and cook for another 30 seconds.
Add chopped tomatoes and vegetable broth.Simmer for about 12 minutes.
Blend the soup until smooth using a blender or immersion blender.
Stir in cream and dried basil.
Season with salt and black pepper and serve warm.
