Lentil Soup

Lentil soup is a hearty and nourishing dish packed with plant protein and comforting flavors. Simmered with vegetables and gentle spices, this wholesome soup is both satisfying .

Ingredients

  • 1 cup lentils, rinsed
  • 1 small carrot, diced
  • 1 celery stalk, chopped
  • 2 tbsp cho
  • 3 cups vegetable broth
  • 1 tbsp olive oil
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp black
  • 1 tbsp chopped parsley (optional)

Method

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, carrot, and celery, cooking for about 3 minutes until softened.
  3. Stir in the rinsed lentils and ground cumin.
  4. Pour in the vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes until lentils are tender.
  6. Season with salt and black pepper.
  7. Sprinkle chopped parsley on top before serving.
