Lentil Soup
Lentil soup is a hearty and nourishing dish packed with plant protein and comforting flavors. Simmered with vegetables and gentle spices, this wholesome soup is both satisfying .
Ingredients
- 1 cup lentils, rinsed
- 1 small carrot, diced
- 1 celery stalk, chopped
- 2 tbsp cho
- 3 cups vegetable broth
- 1 tbsp olive oil
- ½ tsp ground cumin
- ¼ tsp salt
- ¼ tsp black
- 1 tbsp chopped parsley (optional)
Method
- Heat olive oil in a pot over medium heat.
- Add onion, carrot, and celery, cooking for about 3 minutes until softened.
- Stir in the rinsed lentils and ground cumin.
- Pour in the vegetable broth.
- Bring to a boil, then reduce heat and simmer for about 20 minutes until lentils are tender.
- Season with salt and black pepper.
- Sprinkle chopped parsley on top before serving.
