Nourish Kitchen: Plantain Porridge

Introduction

Plantain Porridge is a hearty, nourishing one-pot meal enjoyed across West Africa. Made with plantains, vegetables, and flavorful seasonings, it is both comforting and nutritious. This dish is perfect for breakfast, lunch, or dinner and can be customized with fish, meat, or kept completely vegetarian.

Ingredients

  • 4 medium semi-ripe plantains, peeled and cubed
  • 2 tablespoons palm oil
  • 1 medium onion, chopped
  • 2 medium tomatoes, blended or chopped
  • 1 Scotch bonnet pepper, chopped
  • 1 cup spinach or ugu leaves, chopped
  • 1 smoked fish (optional)
  • 1 tablespoon crayfish powder (optional)
  • 1 seasoning cube (optional)
  • 1 teaspoon salt
  • 3 cups water or stock

Method

  1. Heat palm oil in a pot and sauté onions for 2 minutes.
  2. Add tomatoes and pepper, then cook for 5 minutes.
  3. Stir in crayfish, seasoning cube, and salt.
  4. Add plantain cubes and smoked fish.
  5. Pour in water or stock and bring to a boil.
  6. Cover and simmer for 20 minutes until plantains are tender.
  7. Add spinach or ugu leaves and cook for another 3 minutes.
  8. Stir gently and serve hot.
