Ingredients
- 2 slices wholegrain bread
- 1 ripe avocado
- 2 eggs
- ½ tsp lemon juice
- Salt & black pepper to taste
Method
- Toast the bread.
- Mash avocado with lemon juice, salt, and pepper.
- Fry or boil eggs.
- Spread avocado on toast and top with eggs.
