Avocodo Chicken Salad

Ingredients
- 300g diced chicken breast
- 2 cups mixed vegetables carrot, cucumber, bell pepper, lettuce
- 1 small onion, thinly sliced
- 1 tbsp olive oil
- Juice of ½ lemon
- Salt, to taste
- Black pepper, to taste
Method
- Heat olive oil in a pan over medium heat.
- Add the diced chicken and season with salt and black pepper.
- Cook for 6–8 minutes , stirring occasionally, until chicken is
- fully cooked and lightly golden.
- Remove from heat and allow the chicken to cool slightly.
- In a bowl, combine the mixed vegetables and onion.
- Add the cooked chicken, drizzle with lemon juice, and toss gently.
- Serve chilled.
