Avocado Chickpea Salad

Prep Time: 10 minutes | Serves: 2–3

Ingredients:

– 1 cup cooked chickpeas
– 1 ripe avocado, diced
– ½ cucumber, sliced
– 1 tbsp olive oil
– 1 tbsp lemon juice
– Salt & black pepper

Method:
1. Rinse and drain the chickpeas thoroughly to remove excess salt.
2. Dice the avocado and slice the cucumber into even pieces.
3. Add chickpeas, avocado, and cucumber to a large mixing bowl.
4. Drizzle with olive oil and lemon juice.
5. Season lightly with salt and black pepper.
6. Gently toss until well combined, being careful not to mash the avocado.
7. Serve immediately for best freshness.
