Broccoli Cheddar Soup
Cooking Time: Prep 15 minutes | Cook 30 minutes
Ingredients:
2 cups broccoli florets chopped, 1 medium onion chopped, 2 tablespoons butter, 2 cups milk, 1½ cups grated cheddar cheese, ½ teaspoon salt, ¼ teaspoon black pepper.
Method: Melt the butter in a pot over medium heat and sauté the onion until soft. Add the broccoli and stir gently. Pour in the milk and simmer until the broccoli is tender. Reduce the heat and stir in the grated cheddar until melted and smooth. Season lightly and blend slightly if a smoother texture is desired.
