Ingredients (Serves 4)
- 4 cups fresh broccoli florets (about 2 medium heads)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups vegetable broth
- 1 cup whole milk
- 1 cup heavy cream
- 1½ cups shredded sharp cheddar cheese
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ¼ teaspoon paprika (optional)
Method
- In a large pot, melt butter over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds.
- Sprinkle in flour and stir continuously for 1–2 minutes until lightly golden.
- Gradually whisk in vegetable broth, then milk and cream. Stir until smooth.
- Add broccoli florets and simmer 12–15 minutes until tender.
- Blend partially for a smoother texture if desired.
- Reduce heat to low and stir in shredded cheddar until melted and creamy.
- Season with salt, pepper, and paprika. Adjust to taste.
