Chickpea & Spinach Coconut Curry
Creamy, vegan, and comforting, this curry is packed with plant-based protein and flavor.
Ingredients
- 2 cups cooked chickpeas
- 1 cup spinach
- 1 cup coconut milk
- 1 onion, chopped
- 2 cloves garlic
- 1 tablespoon curry powder
- Salt to taste
Method
- Sauté onion and garlic.
- Add curry powder and stir.
- Add chickpeas and coconut milk, simmer 15 minutes.
- Add spinach and cook until wilted.
