Classic Jollof Rice
Classic Jollof Rice is a vibrant and flavorful West African dish loved for its rich tomato base and aromatic spices. Cooked with rice, tomatoes, and savory seasonings, this hearty meal is perfect for family gatherings or everyday dining.
Ingredients
- 1 cup long-grain rice
- 1 cup tomato puree
- ½ cup chicken or vegetable broth
- ¼ cup diced onion
- ¼ cup diced bell pepper
- 1 tbsp tomato paste
- 2 tbsp vegetable oil
- ½ tsp paprika
- ½ tsp thyme
- ¼ tsp salt
- ¼ tsp black pepper
Method
- Rinse the rice thoroughly and set aside.
- Heat vegetable oil in a pot over medium heat.
- Add diced onion and cook for about 2 minutes until soft.
- Stir in tomato paste and cook for another minute.
- Add tomato puree, paprika, thyme, salt, and black pepper.
- Pour in the broth and bring to a gentle boil.
- Add the rice and diced bell pepper, stirring well.
- Cover and cook on low heat for about 20 minutes until the rice is tender.
- Fluff the rice gently with a fork and serve warm.
