Creamy Vegetable Pasta
Cook Time: 25 minutes | Serves: 3–4
Ingredients:
– 250g pasta
– 1 cup mixed vegetables
– ½ cup fresh cream
– 1 tbsp olive oil
– 1 garlic clove, minced
– Salt to taste
Method:
1. Bring a pot of salted water to a boil and cook pasta until al dente.
2. Drain pasta and set aside, reserving a little pasta water.
3. Heat olive oil in a pan over medium heat.
4. Add minced garlic and sauté until fragrant.
5. Add mixed vegetables and cook until tender but still vibrant.
6. Pour in the cream and stir gently.
7. Season with salt and simmer for 2–3 minutes.
8. Add cooked pasta and toss until evenly coated.
9. Serve warm.
