Cucumber and Yoghurt Salad

Ingredients
2 medium cucumbers, thinly sliced, 1 cup plain yogurt (Greek or natural)
1 tablespoon olive oil, 1 tablespoon fresh lemon juice
1 small garlic clove, finely minced (optional)
1 tablespoon fresh dill or mint, finely chopped, Salt to taste
Black pepper to taste
Method
Wash and slice the cucumbers, then place them in a bowl. Add the yogurt, olive oil, and lemon juice, gently mixing until smooth and creamy. Stir in the garlic and fresh herbs, seasoning with salt and black pepper. Mix lightly to keep the cucumbers crisp. Chill for a few minutes before serving for extra freshness.
