Ethiopian Lentil Stew (Misir Wot – Mild)

Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
- ½ tsp paprika
- Salt to taste
Method
- Heat oil and sauté onion until golden.
- Add garlic and paprika, stirring briefly.
- Add lentils and 3 cups of water.
- Simmer until lentils are soft and thick.
- Season and serve warm.
