Ghanaian Red Red
Red Red is a classic Ghanaian dish made with fried plantains and a rich bean stew cooked in palm oil. The vibrant color of the stew gives the dish its name, and it is both hearty and comforting.
Ingredients
- 1 cup cooked black-eyed beans
- 1 ripe plantain, sliced
- 1 cup tomato puree
- 1 small onion, chopped
- 2 tbsp palm oil or vegetable oil
- 1 garlic clove, minced
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
Method
- Heat palm oil in a pot over medium heat.
- Add chopped onion and cook for about 2 minutes.
- Stir in garlic and cook briefly.
- Add tomato puree, paprika, salt, and black pepper.
- Simmer the sauce for about 8 minutes.
- Add cooked beans and cook for another 5 minutes.
- In a separate pan fry the plantain slices until golden.
- Serve the bean stew with fried plantains.
