Ghanaian Waakye Rice

Waakye is a traditional Ghanaian dish made with rice and beans cooked together with aromatic spices. It is often served with fried plantain, eggs, or stew and is loved for its rich flavor and satisfying texture.

Ingredients

  • 1 cup rice
  • 1 cup cooked black-eyed beans
  • 3 cups water
  • 1 small onion, chopped
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

Method

  1. Rinse the rice thoroughly.
  2. Place rice, beans, and water in a pot.
  3. Add chopped onion, thyme, salt, and black pepper.
  4. Bring to a boil over medium heat.
  5. Reduce heat and cover the pot.
  6. Cook for about 20 minutes until the rice is tender.
  7. Fluff the rice gently with a fork.
  8. Serve with stew, fried plantains, or eggs.
