Grilled Chicken Breast with Mushroom

Ingredients

  • 2 large chicken breasts, skinless and boneless
  • 4 medium potatoes, cut into wedges
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • ½ tsp black pepper
  • Salt, to taste
  • Fresh parsley, chopped (optional)

Method

  1. Preheat oven to 200°C (400°F).
  2. Toss potato wedges with half the olive oil, salt, pepper, paprika, and herbs.
  3. Roast wedges for 30–35 minutes, turning once, until golden.
  4. Season chicken with remaining oil, garlic, salt, pepper, and herbs.
  5. Grill chicken 5–6 minutes per side until cooked through.
  6. Rest chicken 3 minutes, then serve with potato wedges.
