Ingredients
- 2 large chicken breasts, skinless and boneless
- 4 medium potatoes, cut into wedges
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried thyme or rosemary
- ½ tsp black pepper
- Salt, to taste
- Fresh parsley, chopped (optional)
Method
- Preheat oven to 200°C (400°F).
- Toss potato wedges with half the olive oil, salt, pepper, paprika, and herbs.
- Roast wedges for 30–35 minutes, turning once, until golden.
- Season chicken with remaining oil, garlic, salt, pepper, and herbs.
- Grill chicken 5–6 minutes per side until cooked through.
- Rest chicken 3 minutes, then serve with potato wedges.
