Hearty Lentil Soup
Cooking Time: 40 minutes
Servings: 4
Ingredients:
– 1 cup dried lentils (washed)
– 1 tbsp olive oil
– 1 onion (chopped)
– 2 carrots (diced)
– 2 cloves garlic (minced)
– 1 tsp ground cumin
– ½ tsp paprika
– 4 cups vegetable or chicken stock
– Salt, to taste
– Black pepper, to taste
– Fresh parsley (optional)
Method:
– Heat olive oil in a pot over medium heat.
– Add onion and carrots; sauté until soft.
– Stir in garlic, cumin, and paprika; cook briefly.
– Add lentils and stock; bring to a boil.
– Reduce heat and simmer for 25–30 minutes until lentils are tender.
– Season with salt and black pepper.
– Garnish with parsley and serve warm.
