Hummus and Chicken Wrap

Ingredients

Chicken breast 400 g (about 2 medium breasts)

Olive oil 2 tablespoons

Paprika 1 teaspoon

Garlic powder 1 teaspoon

Cumin ½ teaspoon

Salt ½ teaspoon

Black pepper ¼ teaspoon

 

Cooked chickpeas 1 cup (about 240 g)

Tahini 2 tablespoons

Garlic 1 clove

Lemon juice 2 tablespoons

Olive oil 2 tablespoons

Water 2 to 3 tablespoons

Salt ¼ teaspoon

 

Soft wraps or flatbread 4 pieces

Lettuce 1 cup shredded

Tomatoes 1 cup sliced

Cucumber 1 cup sliced

Red onion optional, thinly sliced

Method

Season the chicken with olive oil, paprika, garlic powder, cumin, salt, and black pepper.

Heat a pan over medium heat and cook the chicken for 6 to 8 minutes, turning until golden and fully cooked. Set aside.

Place chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water in a blender. Blend until smooth and creamy.

Warm the wraps lightly and spread about 2 tablespoons of hummus on each wrap.

Add cooked chicken and vegetables evenly.

Roll tightly and serve.
