Ivorian Attiéké with Vegetables

Ingredients

  • 2 cups attiéké (cassava couscous)
  • 1 tomato, sliced
  • ½ cucumber, sliced
  • ¼ onion, thinly sliced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt to taste

Method

  1. Steam attiéké lightly to fluff.
  2. Combine vegetables in a bowl.
  3. Add lemon juice, olive oil, and salt.
  4. Mix vegetables with attiéké gently and serve.
