Lentil Soup
INGREDIENTS
1 cup dried lentils, rinsed
1 small onion, chopped
1 carrot, diced
4 cups water or vegetable stock
½ teaspoon salt
METHOD
Combine all ingredients in a pot.
Bring to a boil, then simmer 30 minutes.
Cook until lentils are tender and soup thickens.
