Mostly Lemon Cake

Serves: 8–10 slices

Ingredients

For the cake:
– 2½ cups all-purpose flour
– 1½ tsp baking powder
– ¼ tsp baking soda
– ¼ tsp salt
– ¾ cup unsalted butter or margarine, softened
– 1 cup sugar
– 3 large eggs
– ½ cup fresh lemon juice
– Zest of 3 lemons
– ½ cup milk or yogurt
– 1 tsp vanilla extract

For lemon drizzle (optional):
– ¼ cup fresh lemon juice
– ⅓ cup powdered sugar

Method

  1. Preheat oven to 170°C (340°F). Grease and line a cake pan.
    2. Whisk flour, baking powder, baking soda, and salt in a bowl.
    3. Cream butter and sugar until light and fluffy.
    4. Add eggs one at a time, then mix in lemon zest, lemon juice, and vanilla.
    5. Add dry ingredients alternately with milk or yogurt. Mix gently.
    6. Pour batter into pan and bake for 40–45 minutes until set.
    7. Mix lemon juice and powdered sugar and drizzle over warm cake.
    8. Cool completely before slicing.
