Nigerian Pepper Soup

Nigerian pepper soup is a light but flavorful broth made with aromatic spices and meat or fish. It is commonly enjoyed as a comforting meal and is known for its warming and spicy taste.

Ingredients

  • 300 g goat meat or chicken pieces
  • 3 cups water
  • 1 small onion, chopped
  • 1 tsp grated ginger
  • 1 garlic clove, minced
  • 1 tsp pepper soup spice
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped scent leaves or parsley

Method

  1. Place meat in a pot and add water, onion, ginger, and garlic.
  2. Bring to a boil over medium heat.
  3. Add pepper soup spice, salt, and black pepper.
  4. Simmer for about 20 minutes until the meat is tender.
  5. Add scent leaves or parsley and cook for another 2 minutes.
  6. Taste and adjust seasoning if needed.
  7. Serve hot.
