Nigerian Vegetable Stew (Efo Riro)
Ingredients:
– 4 cups spinach (chopped)
– 2 red bell peppers
– 2 tomatoes
– 1 onion
– 2 tbsp palm oil
– Salt to taste
Cooking Time: 30 minutes
Method:
– Blend peppers, tomatoes, and onion.
– Cook blend until oil separates.
– Add palm oil and seasoning.
– Stir in spinach and simmer 5 minutes.
