Sierra Leone Cassava Leaf Stew
Cassava leaf stew is a rich and traditional dish popular in Sierra Leone and other parts of West Africa. The stew combines finely chopped cassava leaves with meat, spices, and peanut flavor to create a hearty and comforting meal.
Ingredients
- 2 cups cassava leaves, finely chopped
- 1 cup cooked beef or chicken pieces
- ½ cup peanut butter
- 1 small onion, chopped
- 1 garlic clove, minced
- 2 cups water or broth
- 1 tbsp vegetable oil
- ½ tsp salt
- ¼ tsp black pepper
Method
- Heat vegetable oil in a pot over medium heat.
- Add chopped onion and cook for about 2 minutes.
- Stir in garlic and cook briefly.
- Add cassava leaves and stir well.
- Pour in water or broth and simmer for 10 minutes.
- Stir in peanut butter until well combined.
- Add cooked meat and season with salt and pepper.
- Simmer for another 10 minutes until thick and flavorful.
- Serve hot with rice or fufu.
