Sierra Leone Cassava Leaf Stew

Cassava leaf stew is a rich and traditional dish popular in Sierra Leone and other parts of West Africa. The stew combines finely chopped cassava leaves with meat, spices, and peanut flavor to create a hearty and comforting meal.

Ingredients

  • 2 cups cassava leaves, finely chopped
  • 1 cup cooked beef or chicken pieces
  • ½ cup peanut butter
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 2 cups water or broth
  • 1 tbsp vegetable oil
  • ½ tsp salt
  • ¼ tsp black pepper

Method

  1. Heat vegetable oil in a pot over medium heat.
  2. Add chopped onion and cook for about 2 minutes.
  3. Stir in garlic and cook briefly.
  4. Add cassava leaves and stir well.
  5. Pour in water or broth and simmer for 10 minutes.
  6. Stir in peanut butter until well combined.
  7. Add cooked meat and season with salt and pepper.
  8. Simmer for another 10 minutes until thick and flavorful.
  9. Serve hot with rice or fufu.
