Simple Chickpea Salad

Cooking Time: Prep 10 minutes | No cook

Ingredients:

 2 cups cooked chickpeas, 1 medium cucumber diced, 1 medium tomato diced, ¼ cup red onion finely chopped, 2 tablespoons olive oil, 1 tablespoon lemon juice, ½ teaspoon salt, ¼ teaspoon black pepper.

Method: Place the cooked chickpeas in a large bowl. Add the cucumber, tomato, and red onion. Drizzle with olive oil and lemon juice, then season with salt and black pepper. Mix gently until everything is well combined. Taste and adjust seasoning if needed. Serve fresh or chilled.
