Simple Chickpea Salad

Servings: 2–3
Ingredients:
– 1 can chickpeas (drained and rinsed)
– 1 cucumber (diced)
– 1 tomato (chopped)
– ¼ red onion (finely sliced)
– 2 tbsp olive oil
– 1 tbsp lemon juice
– Salt, to taste
– Black pepper, to taste
– Fresh parsley (optional)
Method:
– Add chickpeas, cucumber, tomato, and onion to a bowl.
– Drizzle with olive oil and lemon juice.
– Season with salt and black pepper.
– Toss gently until well combined.
– Garnish with parsley and serve fresh.
