Strawberry Jam Tartelette

Makes: 10–12 mini tartlets
Ingredients
For the tart dough:
– 2 cups all-purpose flour
– ½ cup powdered sugar (icing sugar)
– 1 cup cold butter or margarine, cubed
– 1 egg yolk
– 1–2 tbsp cold water (if needed)
For the filling:
– ¾ cup strawberry jam
Optional topping:
– Fresh strawberries
– Powdered sugar (for dusting)
Method
- Mix flour and powdered sugar in a bowl. Rub in butter until crumbly.
2. Add egg yolk and mix to form a dough. Add cold water only if needed.
3. Wrap dough and chill for 15 minutes.
4. Preheat oven to 180°C (350°F). Roll dough and press into mini tart tins.
5. Prick the base lightly with a fork and fill with strawberry jam.
6. Bake for 18–22 minutes until edges are lightly golden.
7. Cool completely. Decorate if desired and serve.
