Stuffed Bell Peppers

Stuffed bell peppers are a colorful and satisfying dish filled with seasoned rice, vegetables, and savory flavors. Baked until tender, this wholesome meal is both nourishing and delicious.

Ingredients

  • 2 large bell peppers, halved and seeds removed
  • 1 cup cooked rice
  • 200 g ground beef or ground chicken
  • 2 tbsp chopped onion
  • ¼ cup diced tomatoes
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp grated cheese (optional)

Method

  1. Preheat the oven to 180°C (350°F).
  2. Heat olive oil in a skillet over medium heat.
  3. Add chopped onion and garlic, cooking for about 2 minutes.
  4. Add ground meat and cook until browned.
  5. Stir in cooked rice, diced tomatoes, oregano, salt, and black pepper.
  6. Fill each bell pepper half with the prepared mixture.
  7. Place the stuffed peppers in a baking dish.
  8. Sprinkle grated cheese on top if desired.
  9. Bake for about 20 minutes until the peppers are tender.
