West African Chicken Peanut Stew

A rich and comforting stew combining tender chicken with creamy peanut sauce and warm spices, perfect for family meals.

Time: 45 minutes

Serves: 4

Ingredients

  • 500g chicken pieces
  • 1 cup natural peanut butter
  • 2 tomatoes (blended)
  • 1 onion (chopped)
  • 1 tbsp tomato paste
  • 2 cups chicken stock
  • 1 tsp ginger
  • 1 tsp garlic
  • Salt to taste

Method

  1. Sauté onion, garlic, and ginger.
  2. Add chicken and brown lightly.
  3. Add blended tomatoes and tomato paste.
  4. Stir in peanut butter and stock.
  5. Simmer for 25 minutes until thick and fully cooked.
