West African Peanut Soup (Groundnut Soup)

Creamy, comforting, and deeply flavorful, West African Peanut Soup—also known as groundnut soup—is a nourishing traditional dish enjoyed across West Africa. Rich in protein and healthy fats, it is perfect for family meals and special gatherings.
Ingredients (Serves 4–6)
- 1 cup natural peanut butter (unsweetened)
- 500g chicken pieces (or 1½ cups cooked chickpeas for vegetarian option)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 medium fresh tomatoes, blended
- 1 red bell pepper, blended
- 1 tablespoon tomato paste
- 3 cups chicken or vegetable stock
- 1 teaspoon thyme
- 1 teaspoon paprika
- ½ teaspoon chili powder (optional)
- 2 tablespoons palm oil or vegetable oil
- 1 cup spinach or scent leaves
- Salt to taste
Method
- Season chicken with salt and thyme. Boil for 10–12 minutes and reserve the stock.
- Heat oil in a large pot and sauté onions until soft.
- Add garlic and ginger; cook for 1 minute.
- Stir in blended tomatoes, bell pepper, and tomato paste. Simmer 5–7 minutes.
- Add peanut butter and stir well to combine.
- Pour in chicken stock gradually and mix until smooth.
- Add cooked chicken and simmer for 15–20 minutes until slightly thickened.
- Add spinach or scent leaves and cook for 2–3 minutes.
- Adjust seasoning and serve hot.
